I've noticed little yellow bud-looking things on stems that seem to spring from sphagnum moss in my pots. The "buds" start out in a bed of moss at the surface, looking like little yellow dots, then grow to end up on thin "stems," hanging downward.
Just curious...what are they?

It sounds like you are describing sporophytes which are part of the moss reproductive mechanism, but if so it is not Sphagnum that you are growing as Sphagnum sporophytes look somewhat different.
A photo would help.

I did a quick google image search, and yes, they are sporophytes. And yeah, it is not sphagnum.
And....that answers my question!
