My friend recently gave me a nepenthes in terrible shape. It is wilted, and dried so much that and the media has shrank away from the pot sides. It is currently potted in nondescript brown mush ( probably sphagnum). What should i re-pot it in, and should I try to wash all the old media off the roots?

I would repot it in long fiber sphagnum. It's one of the best mixes to use to re-hydrate a Nepenthes since it also greatly increase the local humidity around the plant. I would also place the entire plant and pot in a large plastic bag if available. After several weeks in the new setup, start to open the bag a little wider every few days for about two weeks. After that, you can remove it from the bag.
I would try to remove as much of the existing soil as possible, just try not to damage the roots. Most soils separate from Nepenthes roots fairly easily, even long fiber sphagnum. The only soil mix that I have had a problem with is a peat/sand mix that someone used. If peat/sand is allowed to become overly dry, it basically "sets" and becomes like concrete, and it can be a chore to get it removed without tearing the roots up.
