I've been trying to germinate some CP's in both Sphagnum moss and peat moss.
But in the Sphagnum there's always something sprouting that looks like a blade of grass. Is this normal?
Before I pluck these out, is there any CP's that would sprout like this?

This often happens in lower quality sphagnum like mosser lee.As long as there are no seedlings that would be harmed if moved, I would pull it out.

Well I do stay away from the Homedepot / Lowes sphagnum moss.
I try to order online when I can. I'm currently using the New Zealand Long Fiber brand.
If I ever find my camera, I'll post a photo if or when they sprout again.

Could be a terrestrial bladderwort, depending on the size of the "blade". They produce photosynthetic leaves (non-carnivorous). Typically there are little flower buds associated with them, though.
I have utrics all over the place in my terrarium. They're a frakin' weed for the most part.
I would grab a camera and post a picture.
