If you get the plants that are native to your area or found in similar climates then they should not need much protection in the winter time. A medium mulching of hay or straw that is removed in spring should suffice.

What carnivorous plant seeds need stratification, and for how long?

It depends what seeds you have.

Do they usually arrive stratified?

All the seeds besides P. lusitanica need stratification. No, it would be hard for the seeds to be stratified before you get them since that would require them to be sent already planted in medium.

Don't you just dry out the seeds, put them in separate envelopes for each species, put them in a sealed glass jar and put them in the fridge?

That would be just storage, stratifying seeds is putting them in a cold, damp, place for at least 4 weeks to mimic natural winter. This can be done by either planting the seeds in there required medium and then putting them in the fridge for 4 weeks, or by just planting them in your bog and allowing them to overwinter there and they should sprout in the spring.

Okay, thanks for all of your help. I'll include a link to a youtube video of my outdoor carnivorous plant bog garden and pond next year, when it's all finished, and of a website of carnivorous plants which I am making(I could give it to you now, but it would just say "currently under construction").
